Corn, Cheese & Herb Bread Loaves
Suitable for Burgers*
7 gms Dried yeast
300 ml. Lukewarm water
4 tsp. Raw sugar
â…” cup GF plain flour
â…“ cup Sorghum flour
1¼ cup Corn meal flour
2 tsp. Xanthan gum
1 pinch of salt
1 tbs. Psyllium husk powder
1½ cup Grated cheddar cheese
¼ cup Grated Grana Padano
1 tbs. Parsley flakes
1 tbs. Herbs (rosemary, thyme, nettle, oregano, basil)
3 large Eggs
¼ tsp. Zest of lemon and juice
1 tbs. Olive and sunflower oils
Method:
1. Activate the yeast in water & sugar solution
2. Mix 1 cup of cornmeal flour with the cheeses & herbs, and put aside to use for the kneading
3. Place the remaining dry ingredients in a mixing bowl
4. Stir in the oil and lemon
5. Stir in the activated yeast, 3 eggs, and combine
6. Cover this soft dough for 30 minutes in a warm place
7. When the dough doubled in size, knead the corn/cheese/herb mix on a board
8. Cut the dough and form 4 loaves (8 buns for burgers)*
9. Place on a baking tray one inch apart
10. Splice the tops, sprinkle with water, and cover. Allow another 30 minutes to rise
11. When doubled in size, place in a preheated oven at 220°c for 42 minutes
12. Allow bread loaves to cool on a wire rack.
