
Festive Bread (Lumblija)
STEP 1
200 gms Georgi’s Bread Mix
(Multipurpose G.F. Flour, Teff, Sorghum, Besan, Psyllium Husk, Xanthan Gum)
1 pinch Salt
2 tbs White sugar
4 tbs Dark brown sugar
7 gms Dried yeast
½ tsp Apple cider vinegar (opt.)
¾ cup Sultanas
2 Whole eggs
250 ml Warm water
3 tsps Olive oil
15 mls Orange juice (opt.)
STEP 2
300 gms Basic G.F. Bread Mix (self-raising)
1 tsp Vanilla extract
½ tsp Cinnamon spice
½ tsp Cardamon spice
½ tsp Nutmeg spice
½ tsp Garam Masala spice
½ tsp Star Anise spice
1 pinch Clove spice
1 tsp Zest of orange (or lemon)
Method:

Combine all the Step 1 ingredients, cover with a cloth, and leave to rise in a warm place for 30 to 45 minutes

Next, mix the Step 2 ingredients, and then add to the yeast-risen mixture, thoroughly mix with bread hooks, and an electric mixer for at least 3-4 minutes

Sprinkle with a little olive oil, and form a dough ball

Divide the dough into 8 servings into a mini-loaf baking tin

Sprinkle a layer of plain flour over the tops

Allow to rise in a cold oven for 30 minutes, and then turn to 110°C for another 35-40 minutes

Allow to cool on a wire rack

The baked bread will sound hollow when tapped on top

Serve sliced cold with some butter.
Tip:
These mini loaves will mature at room temperature, and may be kept up to 5 days, or stored in the freezer.
