Simply Rich Xmas Cake

 

Initial Ingredients

1 cup Sultanas

1 cup  Pitted prunes (cut in half)

½ cup  Glazed cherries

¼ cup  Glazed orange & peel (no pith)

1 jigger  Brandy

1 jigger  Rum

1 jigger  Orange liqueur

3- 4 jiggers   Sherry

 

Ground Spices

1 tsp.   Vanilla extract

1 tsp.   Cinnamon

1 tsp.  Garam Masala

1 tsp.  Ginger

½ tsp.  Cardamon

¼ tsp.  Nutmeg

¼ tsp.  Star anise

¼ tsp.  Cloves

 

Additional Ingredients

1 medium  Carrot (finely grated)

1  Green apple (grated)

1  Zest of lemon

200 gms  Butter (unsalted)

2 tbs.  Olive oil

5 - 6   Whole eggs

 

Flours

2 cups All-purpose GF. flour

1 cup  Coconut flour

1 cup  Almond meal

1 cup   Walnut meal

1 cup   Sorghum flour

1 tbs.  Cacao (for colour and richness)

3 tbs.  Sugar

2 tbs.  Dark brown sugar

1 level tsp.  Xanthum gum

1 level tsp.   Guar gum

2 tsp.   Baking powder

½ tsp.  Salt

 

 

  • Steep the dried fruit in the alcohol for a couple of hours or overnight

  • Stir the spices into the steeped fruit

  • Melt the butter and whip the eggs with the sugar

  • Stir the steeped fruit and spice into the egg mixture

  • Add the finely grated carrot and apple

  • Mix the flours and other ingredients into the fruit mixture

  • Divide the mixture into two prepared medium baking tins and level the tops

  • Sprinkle some more ground walnuts over the tops, or cover with baking paper if decorating with marzipan and icing at a later date

  • Bake in a moderate oven 180°c for an hour and a quarter

  • Remove the cakes from the baking tins to cool on a wire rack.
