

Aussy Banana Buffins

Ingredients
6 large eggs
4 large Ripe Bananas
1 Green apple (chopped)
8-10 tbs. G.F. Flour
2 tbs. Coconut flour
2 tsp. Baking powder
½ tsp. Xanthan gum
6 tbs. Sugar
1 tsp. Vanilla extract
1 tsp. Ground ginger spice
1 tbs. Linseed (whole or meal)
1 tbs. Chia seeds
2 tbs. Oil olive
1 tsp. Peanut butter (optional)
½ tsp. Cardamom spice
½ tsp. Cinnamon spice
¼ tsp. Nutmeg
1 pinch Salt
¼ cup Pineapple juice
1 squeeze Lime juice (or lemon zest)
â…“ cup Sultanas (optional)
1 tsp. Unsalted butter

Method
· Preheat the oven to 185°c
· Butter and flour a mini loaf tin of 8 portions
· Blend all the above ingredients, leaving out the sultanas, with an electric mixer
· Stir the sultanas into the soft mixture
· Fill 8 portions with the cake mixture, and place in the middle of the oven, and bake for 45 - 50 minutes. They should be soft but poker stick clean, and crispy on the outside.
· Cool on a wire tray
· Serve warm, topped with ice-cream.
