Georgi's French Salad

Family Lunch

French Salad

A cool, comforting salad for warmer months. Welcomed by family and friends at gatherings, barbecues, or picnics. Keeps well in the fridge, and pairs nicely with cold meats.

Ingredients

6 - 8            Potatoes

2                 Carrots (diced)

2 cups        Peas

1 cup          Corn kernels

6  or 7         Eggs

4 - 6            Ghurkins (diced)

4 - 6 tbs.     Mayonnaise (Japanese)

1 tsp.          Mustard powder (optional)

1 tsp.          Carraway seeds (optional)

1 tsp.          Salt and pepper

2 tsp.          White wine vinegar

Method

  • ​Boil the potatoes whole in their skins

  • Hard-boil the eggs

  • Boil the diced carrots, peas, and corn

  • Allow all the vegetables to cool

  • Peel and dice the cooked potatoes

  • Peel and slice the eggs

  • Put all of the above in a large bowl

  • Add the Carraway seeds and season with mustard, salt, pepper, and vinegar

  • Stir in the mayonnaise very carefully.

 

Now you can transfer your French Salad into a serving bowl, and garnish with a few basil leaves, or some freshly chopped parsley. ​
