
Apple Finger Cake

Cake Mixture
4 medium Green apples (cored)
1 splash Lemon juice
2 cups Almond meal
â…” cup Ground Walnuts
1 cup Plain GF flour
2 tsp. Baking powder
1 tsp. Guar gum powder
1 cup Cheddar cheese
â…” cup Mixed dried fruit
½ cup Sugar
1 pinch Salt
1 tsp. Cinnamon spice
1 tsp. Ginger spice
½ tsp. Cardamon spice
1 tsp. Vanilla powder
2 drops Almond essence
1 tsp. Lemon zest
4 large Eggs

Topping
2 large Eggs
20 gms Melted unsalted butter
2 tsp. Vanilla sugar
2 tbs. Sour cream
Method

Grease a deep baking dish with butter, and dust with flour

Finely chop the apples with their skins and a splash of lemon juice to preserve their whiteness

Add 4 whipped eggs, salt, sugar, and vanilla powder

Stir in the Almond meal, dried fruit, spices, walnut meal, grated cheese, lemon zest, and almond essence

Mix the guar with the GF flour, and stir it into the cake batter

Pour the apple cake mixture into the baking dish, and level it.
Top & Bake

Make the topping with 2 whipped eggs, sour cream, melted butter, and vanilla sugar, then pour it over the cake mixture

Bake in a preheated oven at 200°C for 40 - 45 minutes)

Allow to cook in the dish, cut into fingers, and serve warm.
