Greekish Chicken Nuggets

 

Ingredients

1 large   Chicken breast fillet

2 tsp.  Greek Seasoning

1 tsp.  Ginger powder

¾ tsp.  Baking powder

1 tsp.  Smoked salt

¼ tsp.  Ground black pepper

1 tsp.  Dried parsley

1 cup  Celery tops (including leaves)

1  Small onion

2  Cloves of garlic (to taste)

1 cup  Mixed Crumbs (equal parts: bread, grated cheese, potato flakes)

2 tsp.  Lime juice (or lemon juice)

1 large  Egg

 

Coating Crumbs

2 cups  Dried potato flakes

 

 

Method

  • Chop finely or blend the chicken, onion, garlic and celery

  • Add the dry ingredients (except for the coating flakes)

  • Mix with the egg, and thoroughly combine

  • Cover and allow to rest for an hour in the fridge

  • Roll the mixture in potato flakes and form small sausage shapes

  • Place on parchment on a flat tray

  • Sprinkle with a little olive oil and cover 

  • Bake for 35 minutes in a hot oven 230°c

  • Brown off without cover for 5-10 minutes

  • Serve hot or cold with Hearty Waldorf Salad
